Pour the za'atar breadcrumbs out onto a baking sheet and spread them into an even layer. Toast the bread for 10 minutes, stirring halfway through. The breadcrumbs are done when they're golden, toasted, and fragrant. Remove the baking sheet from the oven and let the bread cool for 10 to 15 minutes.

Toast your bread slices and slice them into large chunks. Then add bread chunks, za'atar mix & olive oil to a food processor. 2 cups stale bread, 2 tablespoon za'atar spice mix, 1 tablespoon light olive oil. Pulse the mixture until it reaches a crumb consistency. It shouldn't be completely smooth or powdery.

INSTRUCTIONS. Combine panko, za'atar, 2 teaspoons oil, and ⅛ teaspoon salt in 12-inch nonstick skillet. Cook over medium-high heat, stirring constantly, until panko is fragrant and crisp.
